Kangaroo is tasty and lean meat which also avoids some of the soil conservation problems of running sheep in the Outback.

I endorse eating them, perhaps barbequed.

They are, however, difficult to shoot and to farm - the bouncing is problematic.

I saw a program on TV a long time back which was about Australian farmers who shot kangaroos for the pet food trade. They had a freezer container in their yard and every few weeks once it was mostly full the pet food company would come along, collect it and replace it with an empty one.

It was a useful bit of cash for someone who was otherwise straining to make a living. The shooting was mostly done at night ("lamping") when the kangaroos weren't hopping about quite so much.

Aye, lamping is the prefered method of hunting kangaroo. I've never done it myself.

They seem very like deer in their habit, quietly grazing and prone to explosive escape if startled. Even the small ones can move when they get going.

Australians not eating lots of kangaroo is one of those peculiar cultural blind spots you see from time to time. There's no particular reason not to eat them in large numbers, they are cheap and plentiful and taste okay, it's just not a habit.

Our grocery store in Denver used to carry ground kangaroo meat, which at 7.99lb was cheaper than the local buffalo 9.99 lb and trout 9.99 lb.
It made amazing pizza, tacos, and meatballs.
