Plume is a great Twitter client
LauncherPro replaces the Home screen very nicely
Touch Calendar is better than the stock calendar
Auto Rotate Status Bar Switch is very handy for reading on the phone while lying down, as it stops the phone changing from landscape to portrait (or vice versa)
Upvise is a good shopping list manager (Julie enters things from the web, it syncs to my phone, I buy them on the way home)
MoveToSD is a quick way to move apps to the SD card
Swype is a better keyboard than you'd imagined could exist on a touch screen (not available through the market, you have to sign up for the beta on their web site).
Handcent SMS is superior to the built-in SMS client.
Anything I'm missing that I should have?

Photoshop Express, because simple photo editing on the phone is kind of neat.
AndFTP, because file transfer is something I do all the time. And being able to do it without needing a computer is nice. Connectbot is an SSH client that I like for similar reasons.
Vlingo, if you can get it - because controlling your phone via audible command is awesome, and Car Mode for making the phone automatically read incoming email and texts and allowing you to respond by speaking, which starts automatically when it detects your car's GPS? AWESOME.
IMDB and WikiDroyd: Because looking stuff up should be fast and easy.
Flixster Movies: Locates nearby theatres, pulls up showtimes and coming soons, lets you buy tickets if that's your thing, and yanks in RottenTomatoes reviews.
Barcode Scanner: Because, face it, your phone neeeeeds a barcode scanner. Dozens of uses!
PrintBot: Because print-from-phone is useful.
Bump: Transfer files, apps, contact details, pictures, etc to other Bump users by banging your phones together. What's not to love?
Zooborns: baby animal pictures.
Andoku: Sudoku on crack.
I also love Em_Weather, but it's useless for you since it pulls local weather off ec.gc.ca

JuiceDefender and JuicePlotter are incredibly good for tracking and prolonging battery life. There's been a notable improvement on my HTC Desire since I installed them.
Super Box does lots of useful things all in one app: trackers for battery life and memory/CPU use, an installer and an uninstaller for apps (much better than the native uninstaller in the Market) a simple app2sd mover, easy cache clearing, a good taskkiller and easy battery life setting switcher, a file manager (this is brilliant - I couldn't do this without plugging the phone into a computer before) and a simple interface for tracking app security settings. Much simpler than having different apps for all these things, and less hard on phone capacity.
I can't imagine this will be of much use to
LJBeetle is the best LJ client. I also like TweetDeck for doing Twitter, Facebook and Buzz all together. (The Buzz support isn't perfect, but then all Buzz apps are rubbish for some reason.) TweetDeck also does Foursquare, though very badly and I use the Foursquare official app for that.
Brightness Level does what it says on the tin, and has a lovely little widget.
