Why doesn't matter. Proof of concept that it can do something clever, and demonstrated with something most people get.

Solving a Sudoku faster than the national champion is impressive given it's OCRing and then working it all out.

What else can it do?

That's obviously for those moments when you need to break into a nuclear engineer's workstation to prevent the core from going critical and taking out the entire west coast of Australia, and the only thing keeping you from getting in is a Sudoku based key lock system.

I can see a use amongst Sudoku fans. Similar to those crossword solvers people use to solve a puzzle when they get completely stuck.

I've done that before for my parents. I found a sudoku solver that did step-by-step solutions, put in the point they'd got to, and then told them what the next step was (and why), so they could carry on.
