... a question I haven't found any details regarding.

Most commercial kitchens (restaurants) have gas-powered stoves, partly from tradition and partly from the stoves' ability to reach very high temperatures. While most commercial kitchens have mandated ventilation, are there any statistics on higher death rates amongst chefs, dish washers, waiters, and etc?
