My apologies for how quite how trivial this comment is, BUT...

That 'salt grinders are bullshit' thing is very odd and annoying to me (not the article as a whole, which is interesting and seems knowledgeable, just that part).
Saying about salt grinders 'All you’re doing is making your salt smaller than it was before.' is like saying about kettles 'all you're doing is making the water hotter'. Whether salt is in large crystals or finer ground has an effect on the food (you can test this easily yourself) and most people with opinions tend to prefer large for cooking and fine ground when table seasoning.
A salt grinder isn't some chi-chi affectation, it can literally just mean you preferred buying a salt grinder once rather than two types of salt on the reg.

Putting the grinder on the table feels like an affectation, at least in a restaurant: they aren't giving me access to more than one kind of salt, they're just making me do more work. A pepper mill on the table makes sense, because it lets me have fresh-ground pepper without having a server come over and ask if I want fresh-ground pepper, which they usually do before I've tasted the food and therefore don't know whether, let alone how much.

Indeed; it's basic chemistry that finer particles have a larger surface area and are more reactive. With the salt, you'll get more of a salty effect from finer salt crystals.

(Fun fact: it's why a fire in a custard factory once caused an explosion, because of the powdered milk which combusted really quickly.)

There's a magic point where nearly everything becomes explosive. Grain elevators, furniture factories (with sawdust), and sugar mills all suffer dust explosions terrifyingly frequently.
