The problem seems to be that they seem to need nearly 100 staff to make the food that they charge that for. Which would mean that even at minimum wage in the UK they'd be burning through £1,000 an hour in staff costs. And the working hours seem to be about 15 hours a day - so you're talking £15,000 in wages per day they need to make, if they pay everyone minimum wage, on top of rent, electricity, food, etc. The maths might just not work out.

(I'm curious, for your 4-figure meal, how much of that was wine costs?)
