3. I wonder how it compares with aquafaba which is actually plant-based* and readily available in shops ?

You could hard boil eggs and then half and remove the yolk? Best leave to cool a bit (probably good for small mouths anyway) but normally the yolk will just easily pop out.

I'm the same! As a kid, I would only eat the whites of boiled eggs and give the yolks to my cat. I love egg white omelettes too but separating whole eggs feels wasteful when I won't use the yolks for anything, and egg whites from a carton have a slightly off texture.

What is it about the yolks that people who don't like them don't like? It's fascinating because there are so many states, but it seems the dislike can cover them all? (Including in omelette, which is very different).

Is it really usually all states from liquid to hard and crumbly to mixed up? What about pancakes? What about cake? Mayonnaise? At what point does the yolk get "diluted" enough by other things not to bother a "disliker"?

Hard boiled yolk isn't my fave, but I'll eat it. Totally liquid is my favourite state. But my liking covers all states.

For me, I would say it's a matter of richness and density. I largely don't like rich foods that taste fatty or creamy, and egg yolks contribute to that. In something like pancakes or cakes, the richness of the egg yolk serves a function and is balanced out by the dry ingredients. Mayonnaise though, I don't care much for. Lemon curd is good but lemon sauce is better.

I'm fine with scrambled eggs that have yolks, although not if they're creamy or contain milk (I'm a rubbery eggs fan). But I much prefer egg whites because they taste more "clear" and less gamey, if that makes sense. Occasionally I like eggs over easy because liquid yolk comes across like more of a sauce than a meat, but I would always rather have scrambled over fried.

Boiled egg yolk is the worst of all because the texture is foul.

Yeah, I wondered if it was a "fatty" texture thing. My father hates fatty textures and grandfather (other side of family) really hated them. He could not even have false teeth as he could not stand the feel of the stuff they use to take a mould. When they forced him to in the Army, he had a panic attack, felt he was choking.

When I was a smol I loved yolks and hated egg whites :-) I don't know how well a separated white poached egg would work, I never got the hang of poaching.

Edit: ah, but you want the white to cook right through, which is harder to achieve when the centre of the poachie is also white. Stand down, culinary innovators.

Vampire Survivors is quite fun (and it's quite good that the maximum game is 30 minutes long). Although I admit to being a bit of a heretic by being a fan of garlic. That knockback effect is worth the hit in dps, despite what all the "experts" say.
