HTTP/3 is the new name for the mapping layer that adapts HTTP to QUIC. They can’t just use HTTP/2 directly because there are features of HTTP/2 that assume a TCP substrate, e.g the order-sensitive stateful header compression doesn’t work with QUIC’s looser multiplex ordering.

gQUIC was HTTP-specific, but iQUIC is being developed as a generic transport protocol. That part will probably continue to be called QUIC.
