For appearance, there is a single, collected 'realism mod' called Brorrowind:

The pack does all the hard work for you by including a fuck ton of improved models and textures from other mods. This includes the MGE (Morrowind Graphics Extender) which adds a lot of features such as WIDESCREEN resolutions, better draw distances, anti-aliasing, etc.
Personally, I'm a purist and I'm currently replaying playing without Brorrowind but with all the official expansions and plugins. Give me a shout if you want any help.
