How, in a 'pick one of these two things' poll, did they come out with a percentage of poll takers across the two answers adding up to 65%?

Well, _I_ couldn't possibly vote for either.

Yes, but firstly, it says 'which do you believe in *more*' and secondly there's no 'other' option on the poll that we see - and nor should there be in a poll asking for you to place yourself on a relative scale.

Firstly, I believe in them both exactly equally.
Secondly, any poll which doesn't allow for "refuse to respond" as an option, and display those numbers, isn't of any real use.

It may also relieve you to know that that image is a composite - from two different polls, asking whether people believed in ghosts, and whether they believed in George Bush's Iraq leadership, that some smartass has put together into one infographic.
