I tried to find a video of them floating out one of the sections but no luck :-(

The design of the Fehmarnbelt tunnel is basically a scaled-up version of the Øresund tunnel, so they have solid experience with this kind of thing in Denmark.

When we visit my sister in Copenhagen, we used to drive to Puttgarden and take the ferry there. Waiting times were always a bit hit-or-miss, and you could easily spend 90 minutes waiting for a spot. Being able to get out of the car for a bit was nice, though.
But now the bridge between Jutland and Sealand is open, and we use that -- which means more kilometers, but at least you're not dependent on a schedule you have no control over. And the toll for the bridge is about the same as the ferry ticket price.
Once this tunnel is operational, I think we'll take the shorter route again and go through this tunnel.

Another interesting bit is about the tolls. It was briefly mentioned in the article that the tolls will last for about 40 years. So after 40 years the money from the tolls will have paid off the loans needed for the project, and then the tunnel will be free to use. So the tolls are really to finance the building, not to serve as a way to make money off the infrastructure. (Though I doubt I will make a lot of use of the then-free tunnel in 40 years, but it's nice that there is such a forward-looking pan-European vision behind it.)
