NCC-1701-A. Originally USS Yorktown. Name changed and command transferred to James Kirk in recognition of his saving the planet from the weird whale loving space probe in Star Trek 4. Appeared in ST5 and 6, retired at the end of 6.
Constitution Class
NCC-1701-B. Commanded by Captain Harriman in ST-Generations (7). Various novels have depicted its voyages, but nothing official.
Excelsior Class
NCC-1701-C. Commanded by Rachel Garrett. Appeared in ST-TNG episode "Yesterday's Enterprise". Lost at Narendra 3 to Romulan attackers.
Ambassador Class
NCC-1701-D. Present throughout Star Trek - The Next Generation. Destroyed at the end of ST-Generations by the Duras sisters Bird-of-Prey. Saucer section crashes on Veridian 3.
Galaxy Class
NCC-1701-E. Appeared in ST8-10. Heavily damaged but repaired following events of Nemesis. Apparently still in use for a long time as appeared in non-canon comic series that acted as a prequel for the new Star Trek movie.
Sovereign Class
NCC-1701-J. Appeared in Enterprise episode Azati Prime and 2005 Star Trek: Ships of the Line calendar. Very little known, but ship is huge (claimed at 2 miles) and tipped to be a Universe class.
I can add the NX-01 and XCV-330 as well, but that'd be perhaps going too far.
